Lecithin is the predominant source for various foods and pharmaceuticals. Food lecithin is usually de-oiled to improve its functionality. In this process moisture from wet gums is evaporated & the resultant product is cooled in order to receive dry lecithin. Natural ingredients are filled with a range of stabilizers, emulsifiers and release agents. They have a number of uses in pharmaceutical and cosmetic industry applications. Its hydrophobic/hydrophilic character makes it an ideal food emulsifier.
